Jean Defaix inherited a fourth generation estate and has built an enviable reputation for top quality domaine-bottled Chablis. He has now handed over management of the estate to his equally able son-in-law Daniel Dampt. It remains clean, ultra-pure, with bright steely acidity and not so much as a hint of oak. Delicious when young, they can also age gracefully.
