Ferragu’ is a relatively new winery, not much larger than the garages of the famous French “Garagistes.” Carlo Ferragu’ is fanatical about quality. The Valpolicella Superiore, is made using a passito (but not a ripasso) technique, similar to Amarone, to increase concentration. Made from grapes dried for about 40 days (in contrast to 80- 90 days for the Amarone). Very rich (with over 34 g/l of extract) and yet with a perfectly balanced acid structure. Fantastic and miniscule production. A traditional blend of Corvina, Corvinone, and Rondinella, from vines ranging from 6 to 30 years of age.
